Low Carb Mexican Layer Dip
I came up with this on Sunday for foot ball munchies. In days gone by we'd use chips with this dip and I'd put beans in it. Those carb filled days are gone. My husband and I are both in our 50's though we love carbs dearly, they don't love us. The battle of the bulge is a real thing.
This alternative dip is both delicious and scooped up with fresh crisp bell pepper strips is as close as we're going to get to chips and almost as good. Good enough so that we ate the whole thing.
It's super simple: just layer masked up avocados, sour cream, salsa and cheese. Slice up fresh bell peppers and dip away.
