Recipe - Bell Peppers and Wheat Berry Rice Mix

I had some bell peppers that I needed to use before they went bad and this is what I came up with.
Saute a large onion, several bell peppers and some garlic in a little olive oil.  Meanwhile, boil 2 cups of water.  Add 1 cup of brown rice/wheat berry mix.  Cook for 18 minutes.  Add the veggies to the rice mix.  The bell peppers are so sweet.  This dish needs no seasonings.  It's perfect on it's own.
