Sweet Potato Turkey Casserole

Why wait until the holidays for turkey!

Not Low Carb At All.  I made this for my husband last week.  He doesn't have the weight challenges that I have so I still get to cook really yummy, not low carb dishes, but I don't get to eat them.  This is two favorite comfort foods combined.
6 cups sweet potato, mashed
1 Tbl. vanilla
2 Tbl. Cinnamon
1/4 c. evaporated milk
1/4 c. brown sugar
1 large whole turkey breast, roasted, cubed
2 cans cream of chicken soup

Grease the bottom of a baking pan.  I used an 8x8 but I could have used a larger pan and done a less thick layer.  Combine the first 5 ingredients.  Put in baking dish and push back to form a ring around where the turkey will be poured.  Combine the turkey and soup.  Pour turkey mixture in the middle.

There's nothing raw in this dish so you can just put it in the fridge for when you need it and warm up single portions.  If you are serving it at the time of making it, put in oven and bake until warmed through; about 30 minu…

Week Two Weigh-In and Meal Prep - Low Carb

My week end weigh-in was this morning and I'm down 1.8 lbs.  I'm thrilled.  I was right at 1000 calories day.  I got five days of walking 2 miles early in the mornings and a couple evenings I walked again.  I added my arm weights one morning and I'll continue that for the week to come.  I want to get back to doing yoga so my that's my goal for three evenings this week.  I'm going down slightly on calories for next week because I need the slight adjustment.  Half way through this last week I could see that I was stalling so I sent lighter on my dinners for the second half.  Hence the calorie change for next week.  My dinners will be lighter.  I'm not trying to loose piles of weight each week, I just want to see a steady weight decrease without having to make a major change half way through the week.

Jack Rabbits at the Lake

Lake Howard one afternoon this week.  It's early summer and everything is green and blooming and lots of animals are out and about; even the alligators.  We saw jack rabbits at two different spots.

What's Good on Netflix - Girlboss

This is a new show on Netflix.  It's based on the true story of how the business Nasty Gal was started.  If you're not into fashion you'll have no idea what nasty Gal is.  It is an amazing online clothing store.  They carry cool, hip, sexy women's clothing and accessories.  I was already familiar with the store so I'm loving this show.

Britt Robertson plays the main character, Sophia.  What a fun story and I love that it's true!

What's Good on Amazon Prime Video - Bosch

There are now three seasons of Bosch on Amazon right now.  It's a police show.  I love crime shows and this is a good one.  The cast is great.  The main character is played by Titus Welliver and he is perfect for the part.  I don't think I've seen him in anything else so I had to look up the cast.  Apparently he's been in lots of stuff.  Anyway, he's great in this show and I'm really enjoying it.  The other cast members are great too; especially the actor who plays the police captain.  The actor is Lance Reddick.  Him I've seen in lots of shows and he's just as good in this show as he's been in others.  If you like crime shows, you'll like this one.

Reading Resolution for 2017 - The Pelican Bride

I made a resolution to read at least one book each month and I'm sticking to it.  I just finished The Pelican Bride, by Beth White.

It's an historical fiction romance novel.  The story takes place in the early 1700's in an early American settlement in Mississippi.

It's a romance and it's my favorite kind; there's a happy ending.  This was a fun read.  The characters were interesting, the story was interesting and based on historical facts; even better.

I don't want to read a romance every month, but right now it's what I needed.  I plan to see what else Beth White has written.

Container Tomato Garden - Time to Trellis

This is my first time trying to grow vegetables so I'm still learning.  Things don't look so good this week.  I do see some blooms but about half of the plants look great and the other half either dead or headed in that direction.  I'm continuing to read and watch videos.  I can't go back and start over so at this point I'm just hoping for the best.
 I clearly have way too many plants in this old chest that I'm using as my planter.  Next time I'll do better.  The pepper plants that I put in between the tomato plants are all dying.  There just isn't enough room.
The plants are tall enough now that I needed to put up some sort of trellis to hold any tomatoes that I might be blessed with.  This is so simple.  Just put in tall stakes and run string back and forth. The back row is clearly dying.  It makes me sad but this is a learning process.  My next crop will be better.

Meal Prep for Week One Weight Loss

This is the salad prep for my lunches.  Each is 5 oz. tuna, sugar free relish, celery and low fat mayo.  I put as much lettuce as I could cram in the container and topped each with 2 tablespoons of low calorie dressing.  Skinny Girl is my all time favorite.  It tastes great and so low in calories.

 For breakfast each morning I had two fried eggs and two fat free franks, sliced up.  It's super high in protein and low in carbs.  It kept me feeling full and I never got tired of it.
 For dinner each night I had 4 oz. grilled chicken with 2 cups of various vegetables.  I buy them frozen because their easy to store in the freezer and never goes bad.

 My mid morning snack was one of these Atkins 100 calorie drinks.  To be honest, they weren't very good.  But it's what I bought so I tried to use them up.  Most days I took a couple of drinks and the rest went into the trash. 
Sugar free jello is what saved me at the end of each day.  Two cups is only 10 calories.  They filled me…

Weight Loss Journey - How to Actually Loose Weight on a Low Carb Diet

If you've read my recent weight loss posts you know that I've been heading towards the same conclusion, no matter how much I "Tweak" my low carb eating plan.  I guess I've been trying to convince myself that somehow I could avoid the truth that calories really do count and that some how I'd find some secret way of loosing weight without really dieting.  No matter what small things I changed in how I ate or what I ate or how much I excersized I've only lost small amounts of weight and then just gained it back.  My goal for this year was not to maintain but to loose.  To improve my health I need to loose weight and keep it off.

I guess you could say that I'm ready to accept the truth and embrace it and just get on with really loosing weight.  So, I got out my 2017 Calorie King book and started looking at foods.  I put together a simple meal plan with three low carb main meals and two snacks that totaled no more than 1000 calories.  I picked that amount…

Afternoon Bike Ride

Trying to take photos while riding a bike isn't the best way to get great photos.  I'm surprised any of these were any good. 

There's a great paved trail in Winter Haven that starts down town and goes all the way to Haines City at least; maybe further.  We've never gone to the end.  It was a great ride.  The weather was beautiful yesterday, on Easter.  Here are the photos I took while riding along.
